Corn & Zucchini Parmesan Wraps

ingredients

  • 1 pkg. Azteca® Ultragrain Tortillas
  • 2 T olive oil
  • 1 garlic clove, minced
  • 3-4 fresh zucchini, diced
  • 1 cup corn, frozen, canned or fire roasted
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt & pepper, to taste
  • 2 T. chopped fresh cilantro
  • ¼ cup grated fresh Parmesan cheese

In large skillet heat olive oil. Add garlic to the skillet and cook, stirring occasionally, about 1 minute. Add zucchini, corn, basil and oregano. Cook, stirring occasionally, until zucchini is tender, about 3-4 minutes. Season with salt & pepper, to taste. Stir in cilantro. Heat tortillas according to package directions. Top tortillas with zucchini mixture and shredded cheese. Fold or roll to enclose filling. Makes 8-10 wraps.
