"Cheese & Vegetable Tacos"

INGREDIENTS
8.5oz package Azteca® Flour Tortillas
6 oz. (1 1/2cups) shredded Cheddar cheese
2 tablespoons oil
2 cups broccoli florets
Azteca® Mild or Medium Picante Salsa
1 cup sliced fresh mushrooms
Guacamole
1 cup diced red bell pepper
Dairy sour cream
1/2 cup sliced green onions

Heat oven to 350F.
Wrap tortillas securely in foil. Bake at 350F. for 10 minutes or until softened.
Increase oven temperature to 400F.
Meanwhile, in large skillet, heat oil over high heat
Add broccoli, mushrooms, red pepper and onions; stir-fry 2 to 3 minutes or until crisp-tender
Cool slightly; stir in cheese.
Place about 1/3, cup filling down center of each tortilla; fold in half or roll up.
Place on ungreased cookie sheets.
Bake at 400F. for 5 to 10 minutes or until cheese is melted. Serve immediately with salsa, guacamole and sour cream.
